Observation: Do not place sheet pan of raw chicken on 5 gallon bucket of sauces. Chicken was moved. Also do not place small round bowl used to portion out raw chicken in a container of mixed veggies in the make table. Keep utensils/equipment for raw meat, chicken or seafood sep from other foods. Mixed veggies were discarded.

Observation: Make table and reach-in are holding the raw chicken, raw beef, sprouts and fried chicken pieces at 44-47F - shall be 41F or below - they will try and turn it down and if that does not work they will call repair company in.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: New thermometer is needed in reach-in - the one currently in the unit is not working. Corrected
