Observation:Observed pasta salad prepared this morning cooling in tightly covered, deep plastic containers in walk-in cooler - temperature of salads were 71 degrees. Transferred to shallow metal pans to continue cooling, corrected on site.

Observation:Observed plastic bags on shelf to be reused - bags had food particles in them and were soiled on the outer surface. Discarded, corrected on site.

Meat slicer had visible food particles on the top guard and lower guard both on the reverse side - machine taken apart to be cleaned. Corrected.

Available quat test papers had expired and the paper was faded, no longer able to accurately monitor sanitizer concentration.

Observed mops on the floor by the storeroom door - person in charge stated that the mops are dried outside then brought in. There are no mop hangers in the janitor's storeroom.
