  • Handwashing signage
    Observation:There are no handwashing signs in the restrooms
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation:None of the containers of food are marked with date of preparation, repeat violation.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation:Observed baked potatoes wrapped in aluminum foil stacked in a plastic bowl in kitchen refrigerator - temperatures of the potatoes ranged from 43 to 49 degrees. These cooled overnight, did not reach 41 degrees within 6 hours. Discarded, corrected on site.
  • Food temperature measuring devices are accurate to ±1°C or ±2°F in the intended range of use
    Observation:There is a digital thin-tipped food thermometer but the battery is dead, thermometer is not in working order.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation:There are no quaternary ammonium (quat) test papers to monitor sanitizer concentration, from 200-400 ppm.
  • Outer openings are protected
    Observation:Observed visible opening under back exit door in storeroom, there is inadequate weather stripping along the bottom of the door.
