    Observation:The handsinks behind the bar and at the waitress station are both being used for handwashing and as a dump sink for used drink ice. COS by establishing the waitress station handsink is to be used as a handwashing sink only and the sink behind the bar is to be a dump sink only.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: The fan unit in the walk in cooler has a moderate/heavy amount of dust accumulation. The kitchen equipment are moderately soiled, in particular refrigerator and coolers inside and out.
  • Raw animal foods separated from each other during storage, separation, holding, and display
    Observation: There was raw chicken stored over raw beef roasts. COS by moving chicken to a lower shelf.
  • Disclosure of menu items offered or served raw or undercooked
    Observation: The items needed for the consumer advisory are not recognized in the menu.

    Observed taco meat at kitchen steam table was 122 degrees, employee said she added a chunk of cold meat to the existing pan to reheat 1 1/2 hours before inspection. Meat removed to reheat, corrected.

    Observed crate of potatoes stored in front of kitchen handsink, in an area prone to contamination by water splashing from handwashing. Repeat violation.

    Observed tomatoes and corn relish in upright cooler by grill, and cut tomatoes, cooked chicken and corned beef, cooked hamburger, slaw, cut ham and broccoli salad in walk-in cooler with no date-marking on containers.
  • Food temperature measuring devices are accurate to ±1°C or ±2°F in the intended range of use
    Thermometer in mini pizza cooler showed 48 degrees, actual temperature was 36 degrees. There was no thermometer in grill prep cooler by steam table.

    Open beverage containers in unapproved area - kitchen. Repeat violation, corrected.

    Observed several foods reheating in steam table - stew was 141 degrees, taco meat 59 degrees, sauce 69 degrees. Repeat violation.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observed packages of cooked corned beef stored on trays with raw ground beef and raw whole roasts - the corned beef was sitting in pools of raw meat juices on the trays. Discarded, corrected.
  • Food temperature measuring devices are provided and readily accessible
    Thermometer in mini pizza cooler showed 48 degrees, actual temperature was 36 degrees. There was no thermometer in grill prep cooler by steam table.
  • Roasts held at a temperature of 130°F or above
    Observed foods on salad bar at 43 degrees, food was above the level of ice around the containers. Repeat violation.
  • Hand drying provided
    There were no paper towels at kitchen handwashing sink, corrected.
