Observation:Does not have a copy of plan for Clean up of V&D events, refers to janitorial staff. Must develop and have on hand the supplies needed to respond to an event and have a written procedure to guide the person in distances to clean, methods, and discarding/replacement of impacted foods. Given further examples.

Observation:Has shredded lettuce at 52 degrees on line and salad bar for self serve. Sliced tomatoes at 48 degrees on line. Will discard today at end of service, will surround metal containers with more ice to keep at 41 degrees or less.

Observation:1) Faucet for 3 compartment sink leaks slightly when turned on. 2) Drain line for 3 compartment sink leaks 3) Drain line for sprayer next to dish machine leaks. Maintenance knows of plumbing and plans to repair during summer break.
