When to wash Observation: Employee from kitchen moved out of kitchen with gloves on. Re-entered kitchen, removed gloves and donned new gloves without washing hands.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: Thermometer broken in the double sided 4 door cook line cooler and the milk cooler near the coffee area. Thermometers missing from 2 creamer coolers near the coffee area. Employee replaced thermometers placed in all locations.
