Date mark potentially hazardous ready-to-eat foods with the day of prep. Seven day hold on these products, freezing stops the time but must be marked in/out of freezer. Items maked at time of inspection corrected on-site.
- Foods are cooled using appropriate methods
Large quantities, plastic containers, and cooling at room temp- pasta sauce cooling at room temperature. Product was broken down to smaller stainless steel containers and ice bathed, corrected on-site.
- Air drying of equipment and utensils
Drying glass with towel, this can contaminate glass. Part of the sanitize step is to allow dishes to dry.

Label bulk foods taken from original container in at least englsih- some items not marked with common name of food.

Foods from 43-68F, prep cooler left of grill not working in correct range most items stored on the bench without refrigeration or on ice some items placed on ice some discarded, temporary fix.
