Air drying of equipment and utensils Observation: Observed wet serving trays that are apparently stacked before being allowed to properly air dry at the Mc Combs Middle School location where all warewashing activity is done. Clean ware must be allowed to air dry before stacking and transport.

PHF/TCS foods receiving temperatures Observed turkey and cheese sandwiches received from prep kitchen at 50-54 degrees - cold items are transported in holding cabinets that are not insulated and only one ice pack was on top of each pan. An additional ice pack was placed on each pan - corrected.
Using a handwashing sink- operation and maintenance Observed fruit in handwashing sink drain - employee stated that the food prep sink was removed during recent remodeling and the only sink in the kitchen is the handwashing sink.
