Observation: The establishment does not have a thermometer with a suitable small diameter probe accessible to measure temperatures of thin foods (steak for steak sandwiches). Applicant stated that a thermometer has been ordered and anticipated delivery date is February 23, 2015.

Observation: Portions of the floor tile in the bake shop are broken or missing, thus creating conditions that me be difficult to clean. Hole observed in west wall near dough sheeting equipment. Ceiling surface above the ice making machine is damaged and not maintained in sound condition.

Observation: There is no hand washing sink near the front retail counter area. Employees must currently pass through a set of swinging doors to access a hand sink that is located in the kitchen area (approximately 15-20 feet away). Hand sink installation will also require the provision of appropriate hand drying devices (paper towels) and hand soap.

Observation: The breakfast menu does not disclose eggs as a food that is prepared or sold undercooked.
