Observation:Fuzzy dust noted on condensors in cooling units and on ceiling over prep area in kitchen. Greasy build up in kitchen. Especially heavy at lower wall to floor juncture area.

Observation: Mae Ploy bottles on tables are being refilled. These bottles are designed as single use articles and are not meant to be used over and over. Additional sauce is added to the top.

Observation:Cleaning frequency needs to be increased. Can opener, prep cooler handles, food contact surfaces in the kitchen, food probe thermometer and case,food containers, kitchen surfaces etc...have grease residue. Mold noted on beverage tubing and pop line to pop gun over ice bin area at bar.

Observation:at manual sink in bar- the sanitizer is at about 50 ppm, however water temp is around 70F. Glasses must be fully submerged as well. (at time of visit-floating on top) Additionally, stack of glasses were not allowed to air dry and were stacked wet.

Sanitizer strength is weak at front cook station and at bar. The test strips for the sanitzer that was in the sink bay at the time of visit had no template for staff to compare for appropriate strength. Wet nested glasses noted at the bar area, additionally, some wet nesting of wares noted in kitchen area.
