- Screening
Failure to provide adequate screening or other protection against pests. Specifically, the overhead dock door and walk through door next to it are not sufficiently sealed to prevent the entry of insects and rodents.
- Labeling
Several items such as candy, cookies and cinnamon sticks must be properly labeled with the firm's name, address, contact information, common name of food packaged, list of ingredients (whenever two or more ingredients are combined) net contents (weight, count or volume) and any cautionary statement such as allergens.
- Buildings/sanitary
Failure to maintain buildings, fixtures, or other physical facilities in a sanitary condition. Specifically, heavy dust accumulation and apparent water stain was observed on numerous packaged foods in the warehouse storage area.
- Buildings/good repair
Failure to maintain building and physical facilities in repair sufficient to prevent food from becoming adulterated. Specifically, roof leaks are apparent from catch pails located throughout food storage areas. Roof repair is a repeat violation from the January 2012 inspection. Roof must be repaired to avoid further enforcement action.
- Storage
Failure to store raw materials in a manner that protects against contamination. Specifically, numerous boxes of single service items such as straws were observed soiled and stained. Many affected items were disposed of during the inspection and sorting continues on remaining items.
- Drip and condensate
The plant is not constructed in such a manner as to prevent condensate and drip from contaminating food. Specifically, a large amount of ice was observed beneath two condenser units in the walk-in freezer. Freezers must be repaired and food must be protected from coming into contact with contaminated ice.
