Observation: Large container of pizza sauce sitting out on kitchen counter (53F). Employee stated it was out for the lunch rush, approximately 60 minutes. Pizza sauce was placed back into the cooler. Manager stated that pizza sauce was tested to be safe for leaving out at room temperature. No documentation available onsite.
- Sanitization of food contact surfaces - before use and after cleaning
Observation: No sanitizer set up at time of inspection while food preparation was taking place. Employee set up a new sink full of chlorine sanitizer at the correct concentration and wiped down all the counters.
- Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with law, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food, as specified under 2-201.11(A)
Observation: No verifiable Employee Health Reporting Agreement available onsite. Inspector left a reporting agreement with manager.
