    Observation: Establishment does not have adequate space for cooling large batches properly. Establishment plans to add refrigeration.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation: Food is prepared in large batches and stored in large buckets without proper cooling. Specifically rice in oven that is not on at 100 degrees. Voluntarily discarded at time of inspection.
  • Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
    Observation: No certified food safety manager. Must obtain within 6 months.

  • Multiuse food contact surfaces are constructed of safe materials
    Observation: Containers for spices are not food grade.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: No test strips for checking concentration of sanitizer.
  • Cleanability of floors, walls, and ceilings
    Observation: Flooring in kitchen is not smooth or easily cleanable. It's made of two different surfaces and the grouting isn't cleanable.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: Sanitizer in dishmachine was barely detected.
  • Multiuse food contact surfaces are constructed of materials that are: durable, corrosion-resistant, non absorbent
    can withstand repeated warewashing
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Refrigerators were not on at time of inspection.

    Observation: Filters are not installed on ventilation hood.
