- Ice used as exterior coolant not used as a food
Observation: Containers of cut limes and lemons stored in the ice machine. Containers were removed and placed in a pan which was filled with ice.
- Cooling foods are stored properly
Observation: Refried beans cooked last night were covered tightly and stacked on top of each other.
- Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with law, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food, as specified under 2-201.11(A)
Observation: PIC was unaware of responsibility to report symptoms/illnesses.
- Foods are cooled using appropriate methods
Observation: Refried beans and soup cooked last night cooled in deep containers. Products were placed in cooler after cooking.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation: Raw shell eggs stored over ready to eat foods. Shell eggs moved to a lower section of the shelf.
- Equipment location, installation, repair, and adjustment
Observation: Produce washing sink has a leg that is not attached.
- Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
Observation: Refried beans and chicken soup cooked last night not cooled to 41* or below. Refried beans had temps of 45*, 51*, and 48*. Soup had a temp of 47*. Products were discarded appropriately.
- Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
Observation: Tomatoes dated 12/29/14 found in the walk in cooler. Tomatoes were discarded.
- Smoke free air act
Observation: "No Smoking" signage not posted. Left a "No Smoking" sticker. Sticker was placed on door at time of inspection.
- Established procedures for responding to vomiting and diarrheal events
Observation: No procedure for the clean up of vomit or diarrhea.
- Bare hand contact with ready to eat foods
Observation: Bare hand contact with washed cilantro being chopped for fresh salsa. Cilantro was rewashed and gloves worn to chop.
