Observation:1)Has dishes drying under the drip area of the towel dispensor, consider protecting by shield or reverse the order to have dirty dish washing on this end rather than air drying. 2)Has directions from corporate to label one of food prep sinks for kale use only, not done yet, owner corrected on site with labeling the first sink for kale use only. 3)Has scrapper used for floor cleaning, damaged surface, in with regular utensils by other utensils, discarded now, corrected.

Has some chemicals stored over dishware and items used for fruit display, and dry storage rack, must keep all chemicals on shelving lower than any food supply items, moved all chemicals to lowest shelf and not adjacent to food supplies. Corrected on site.

Has fruit resting directly on white cloth towels and has special white towels for wiping fruit, will obtain from corporate the spec sheet for usage of these towels on fruits, ie food handling safety guidelines.
