  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Large walkin cooler was 49.5deg using my digital stem thermometer. Baked potatoes in oven were 81deg but oven was cold. Either keep cooked foods hot or cold, not at room temperature. Baked potatoes were discarded.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Observation: hood venting over broaster needs to be more directly vented so it connects under the large hood exhaust.
  • Removing dead or trapped birds, insects, rodents, and other pests
    Observation: strong smell of dead mouse in large dining room especially toward front door
  • Toilet room
    receptacle, enclosed, fixtures clean
  • Hand drying provided
    Observation: paper towels needed in employee restroom
  • In-use utensils, between-use storage
    Observation: ice machine scoop had handle in the ice bin-store with handle out

  • Frozen PHF/TCS foods are properly slacked and thawed
    Thawing should be done in fridge overnight ideally. If need quickly thaw under cool running water or in microwave to use immediately. Hamburger thawing on countertop during today's inspection was in the 50s already.
  • Roasts held at a temperature of 130°F or above
    move potentially hazardous food plus sliced tomatoes and cheese to cooler when not during a rush time if they are not able to maintain 41deg or less. Cooked ribs sitting at room temperature today were in the 60s. Either keep foods hot 135deg or more or cold at 41deg or less. Corrected on site.
