Observation: Common towels were laying on counter tops after each use.

Observation:The quat sanitizer was 0 ppm. The unit was adjusted and was 200 ppm prior to me leaving.

Observation: Two fridge units in the back room are not working and shall be removed from the facility.

Observation: The facility did not have test strips to test quat sanitizer.

Observation: Eggs were being stored above ready to eat foods. The unit was moved.

Observation: A couple of food items in storage were not labeled.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: The vent hood filters above the ovens were not clean to sight.

Observation: Food in the walk in cooler was setting on the floor. The food was picked up and placed on the shelf.

Observation: Several containers were not labeled in the food prep area.

Observation: The cans in the dry storage area and the bottom of the milk cooler were not clean to sight.

Observation: The freezer was not working at the start of the inspection. A part was ordered in Sioux Falls and was in the process of being replaced.

- Duties of PIC
The facility was using quat sanitizer to clean up vomit. Quat is not effective at cleaning up vomi from a possible norovirus issue.
- Linens- cleaning and storage
Scoop handles were laying in the food products.
- Food temperature measuring devices are provided and readily accessible
The facility does not have a thin probe thermometer to check small masses with.
