    Observation:Cooked sausage holding at 88* after 2.5 hours of cooling in catering walk-in cooler. Voluntarily discarded.
  • Storage and maintenance of wet and dry wiping cloths
    Observation:Wiping cloths not maintained in sanitizer between uses. Cloths were place in sanitizer buckets at time of inspection.
  • Foods are cooled using appropriate methods
    Observation:Cooked sausage and cooked steak cooling in tightly covered plastic containers in catering walk-in cooler. Sausage was voluntarily discarded and steak was removed from container and placed on sheet tray to finish cooling process.
  • When to wash
    Observation:Observed dish area employee fail to wash hands between handling soiled and clean utensils. Discussed.

    Observation:Table mounted can opener not kept clean. Cleaned and sanitized at time of inspection.
