  • Test kit provided and used to measure sanitizing solution concentration
    REPEAT VIOLATION: test strips not provided
  • Handwashing sinks-Numbers, capacities, location, and placement
    Observation: handsink in back room not easily accessible -- blocked by shovel, broom, and cases of soda
  • Separation from food, equipment, utensils, linens, and single service
    Observation: toxic items not stored in designated area away from food and beverages
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: thin probe tip sensitive thermometer not provided

  • The ability to explain the responsibility of the person in charge for preventing the transmission of foodborne disease by a food employee who has a disease or medical condition that may cause foodborne disease.
    Person in charge unable to adequately demonstrate knowledge of food safety as defined by code -- cooling procedures, food temps, employee health policy. Recommend attending a food safety course. Inspector will follow-up on next inspection.

    Provide test strips to monitor sanitizing solutions.
  • equipment food contact surfaces and utensils clean to sight and touch.
    Excessive mold build-up in ice machine. Machine was shut down and bagged ice will be used until machine has been properly cleaned and sanitized.

    Provide thin probe tip sensitive long stem thermometer.
  • Sanitization of food contact surfaces - before use and after cleaning
    Three compartment sink will not hold water -- manager is going to purchase new drain plugs
