Observation: Wet wiping cloth was observed on the prep table not stored in sanitizer. Must store all wet wiping cloths in sanitizer to prevent buildup of bacteria.

Observation: Salisbury steaks were observed holding in gravy @ 118*F. Product was reheated at time of inspection. Must maintain hot food @ 135*F or above.

Observation: Lettuce dressing was not labeled. Must label all working containers with common name of product unless easily identifiable. Labeled at time of inspection.

Observation: Package of cheese and shredded carrots were not date marked. Must date mark all TCS (time/temp control for safety) food with date opened/prepared and then discard within 7 days.
