Observation:Floor of mobile unit not kept clean.

Observation:Mobile unit is currently having issue with hot water heater. Mobile unit did have adequate hot water available at time of inspection. Water was being heated by alternative means.

Observation:Food employee handling tortilla and cooked steak with bare hands. Inspector discussed requirement with PIC and procedure was changed at time of inspection.

Observation: Prep cooler is the only refrigeration for this mobile food unit and would not reach 41 degree internal temperature at the time of inspection.

Observation: Water was dripping from the interior ceiling of the mobile food unit.
