    Observation: Cooking chicken wings and placing in covered, deep container and putting in prep table to cool.
  • Storage of clean linens, single-service, and single use articles
    Observation: Boxes of single use items on floor.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: Establishment does not have a thin tipped thermometer
  • Backflow protection
    air gap, device standard, when required
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: Mechanical ware washing machine uses a chlorine based sanitizer, bar uses a quatenary based sanitizer, no test strips for checking either.
  • Hand drying provided
    Observation: No paper towels at hand sinks.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: Mechanical ware washing machine not sanitizing. Instructed owner to use three compartment sink until working properly. Must submit invoice showing what was done to fix machine. Also strongly recommended to use single use food contact surfaces (utensils, plates, cups) until machine is working correctly.
  • Storage of clean equipment and utensils
    Observation: Clean dishes and utensils stored directly next to hand sink. No barrier.
  • Cleaning of cooking and baking equipment
    Observation: Interior of microwave heavily soiled.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation:Food in walk-in cooler at 44 degrees.

    Observation: Menu items cooked to order not identified.
