Observation: Several boxes on the floor of the walk in cooler at the time of the inspection.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: You must label and date mark ready to eat food that are in the walk in cooler. Also, label and date mark food once it is removed from the original package. (hamburger, pork loin in containers in the freezer ). Review labeling and date marking document

Observation:Do not store items on floor of walk in freezer.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Must have thermometer(s) in all coolers and freezers. No thermometer found in the following coolers: cooler in salad bar area and in prep cooler in the kitchen.
