I don't have stats (do they exist?) to back this up, but it seems to me that most of the people who haven't been vaccinated are people in their 20s and 30s who think covid can't hurt them. Education level and political affiliation don't seem to make much difference. It's just that a certain group has been very vocal about it...and they have become the stereotype.

That study is accounting for all College Degrees, not PHD's specifically - and even this shows Blacks and Hispanics are still disproportionately less likely to get the jab.
And over two thirds of Americans believing in UFOs held a Bachelors Degree or higher. Really, so what? Let the education crap go. Just how smart do you think you are?
The problem here is...it's based on a survey of only 6,000 people, and the survey was taken before the vaccines were available to the vast majority of the general public.
I believe that many/most people make the choice based on what they feel their level of risk is.
I do think education level plays a large role for people that are 40+. But under 40, not so much.
In other words, if there was a survey of 52 year olds, I think the results would be very different than with a survey of 27 year olds.

Not sure why you picked out real estate agents to compare. But while most police departments require at least a high school diploma, I'm aware of no such general requirement for real estate agents. They simply must take a curriculum of classes and pass a test. A very odd comparison of professions? Oh, that's right I'm supposed to be a real estate agent in South Providence. Almost forgot. LOL
I believe it's a fair comparison. That said, there's been some hostility on the board recently. If some people choose to dish it, they've gotta be able to take it.
