I did the same work out in the Elliptical on wed and thurs morning. Wed morning my heart rate went up to 120 pretty quick and up to 135. Yesterday it went up slower it took a lot of faster and more resistance to get it to 125. I notice this sometimes if I ate something different or different time a day but not same time same workout (didn’t eat yet) 2 days in a row.
This seems to happen sporadically. I’m 49 female in perimenopause.

What are you using to measure your heart rate? Smart watches can be unreliable.

Try a full 18 oz glass of water very first thing in the morning, before you eat or drink anything else.
I have noticed the same phenomenon with me and drinking water helps. I started that routine over a year ago, so it's a habit now.
