Everything about this is just wrong. For one infectious disease specialists are specialists in guess what? Infectious disease and not nutrition. Nobody calls an infectious disease expert for his consultation on diet or nutrition.
It is also anecdotal about himself and he already has preconceived notions about what will happen. It's basically a negative placebo (Nocebo). There's a reason why double blinding is an important aspect of experiments.
It's all show pretty much like most of the TV doctors out there. Seriously eating four weeks of junk food going to take off 10 years of life?
Generally, a highly-processed or ultra-processed food is something unrecognizable as food in nature. It has gone through multiple processes and has several added ingredients. It contains ingredients that you wouldn't add when cooking at home.
Unprocessed and minimally-processed foods are recognizable as they exist in nature and only contain culinary ingredients.

And, most modern foods are processed to some extent. Pasteurized milk, cultured buttermilk, ground meat, yogurt, bread, pasta, canned fish, pickles, sauerkraut.
Western diet is loosely defined as inadequate fruits, vegetables, whole grains, legumes, fish, poulty, and low-fat dairy products, and includes excessive amounts of refined and processed foods, processed meats, alcohol, salt, red meats, sugary beverages, snacks. It's low in potassium, high in sodium, fats, and simple carbs. It has been implicated in many diseases, including atherosclerosis, type II diabetes, hypertension and obesity.

Pringles. Apparently they are so processed the only nutritional value left is a small amount of vitamin C. The rest of it is simply empty calories. That’s versus a regular potato chip which has a little bit of protein, a little bit of iron, a little bit of potassium and a little more vitamin C.
I mean a potato chip isn’t the best example, I just remember that kid that had food sensory disorder who would only eat Pringles and soda and ended up in the hospital extremely malnourished and I was surprised that Pringles literally had almost no nutritional value at all. Because it isn’t technically a potato chip. It is I believe dehydrated potatoes rehydrated, formed into those things and then I think they’re baked not fried to keep their uniformity.
Not surprising- did anyone see the documentary "Supersize Me"? Morgan Spurlock pretty much lived on food from the drive-through at McD's and made it a point to get the Supersized meal any time an employee offered that option. He ended up an absolute physical mess.
Yeah, Pringle's are disgusting. I was on a plane flight once with Buy on Board and selected a box with hummus, pita, olives, etc. from the menu. They were out of that and all the semi-healthy stuff but had Pringle's. I was grateful I had a stash of protein bars- also processed but at least had some nutritional value.
Any massive change in diet will upset your body. Junk food to health food or visa versa, healthy food to junk food. Someone who ate nothing but potato chips, soda, and Twinkies would get sick if they were changed abruptly to lentils and broccoli. organic or not.
Changing what you drink can also upset your body.
