THEN THE 1-COMPARTMENT SINK ON SOILED SIDE OF DISH MACHINE DRAIN BOARD IS USED TO WASH MINIMAL UTENSILS THAT FACILITY USES TO DISPENSE FOOD. AFTER RINSING, THE UTENSILS ARE SPRAYED WITH CHLORINE SANITIZER FROM A SPRAY BOTTLE, THEN AIR DRIED. THE SPRAY BOTTLE WAS TESTED AT OVER 200PPM CHLORINE. THE SANITIZER SHALL BE BETWEEN 50-100PPM CHLORINE. FACILITY DOES NOT HAVE A 3-COMPARTMENT SINK - ONLY A 2-COMPARTMENT SINK. THE CURRENT METHOD OF WASHING UTENSILS IS NOT CORRECT. UTENSILS SHALL BE WASHED, RINSED, SANITIZED USING A 3-SINK METHOD. FACILITY MUST APPLY FOR A VARIANCE TO BE ABLE TO USE THE 2-COMPARTMENT SINK, THEN PLACING A TUB WITH SANITIZER AS THE 3RD SINK AND IMMERSE UTENSILS FOR AT LEAST 10 SECONDS AND THEN AIR DRY. A VARIANCE FORM MAY BE EMAILED TO FACILITY. IF VARIANCE IS APPROVED, THEN THIS METHOD SHALL BE FOLLOWED. IF VARIANCE IS NOT APPRVED, INSTRUCTION WILL BE GIVEN ON WHAT IS REQUIRED.
