Ambient temperature of unit checked at 45 F.

Observed emplyee working with ready to eat foods not wearing gloves. Employee put on gloves at this time. Must implement glove use policy for employees to prevent bare hand contact with ready to eat foods which is now required under new regulations.Noted food containers in refrigerators not date marked. Must date mark all food containers which is now required under new regulations to ensure foods are used wtihin 7 days.

Chopped beef 175 F; shredded chicken 174 F on steam table.Sliced american cheese 35 F; sliced turkey 35 F; round cheese package 35 F in refrigerated prep table.Noted hand sinks stocked and functional.Chlorine test strips available for monitoring of sanitizer for proper concentration.Discussed employee heath policy as for illness symptoms that require employee exclusion from work and return to work time frame.Dumspter for stripmall noted overfilled with garbage bags. Garbage pick up is tomorrow and picked up once per week. Per operator; dumpster is never overfilled except on rare occasions when renters of storage untis behind building drop refuse in the dumpster. Ensure that garbage is properly stored and contained in dumpster.
