    The refrigerated prep unit was serviced; temperature inside unit at 27 F and on top of unit at 30 F.Ice machine lid was obatined and will install this day.Ok to re-open.

    Pans of sliced ham; sliced turkey; sliced cheese and shredded cheese checked at 50 F on top of refrigerated prep table. All food products are kept in small amounts; all were voluntarily discarded.Adjust thermostat of unit and keep lid closed when not in use to keep product temperatures at 41 F or below. Ambient temperature of unit checked at 45 F.

    Noted paper towel dispenser for ktichen hand sink empty. Paper towels were provided at this time. Keep paper towelss stocked at all times.

    Remove clean towel bag and trash bag from floor and keep back area uncluttered for easy cleaning of floor and equipment in back area.

    Observed emplyee working with ready to eat foods not wearing gloves. Employee put on gloves at this time. Must implement glove use policy for employees to prevent bare hand contact with ready to eat foods which is now required under new regulations.Noted food containers in refrigerators not date marked. Must date mark all food containers which is now required under new regulations to ensure foods are used wtihin 7 days.

    Noted two pans with food products covered with clean cloth towels in refirgerator. Discontinu using cloth towels in direct conatct with foods as these may impart chemicals from laundry to foods. Towels were removed from pans at this time.

    Ice machine is missing the top lid. Keep ice machine covered to protect from dust. Keep covered with sheet pan until a new lid is obatined.

    Noted moist wiping cloth not in sanitizer on cutting board. Provide sanitizer bucket for rinsing and storage of moist wiping cloths.

    Chopped beef 175 F; shredded chicken 174 F on steam table.Sliced american cheese 35 F; sliced turkey 35 F; round cheese package 35 F in refrigerated prep table.Noted hand sinks stocked and functional.Chlorine test strips available for monitoring of sanitizer for proper concentration.Discussed employee heath policy as for illness symptoms that require employee exclusion from work and return to work time frame.Dumspter for stripmall noted overfilled with garbage bags. Garbage pick up is tomorrow and picked up once per week. Per operator; dumpster is never overfilled except on rare occasions when renters of storage untis behind building drop refuse in the dumpster. Ensure that garbage is properly stored and contained in dumpster.
