    All violations from previous inspection are considered corrected.Washoe County Health District staff has reviewed the information provided by the operator on the countertop True dressing refrigerator and will allow the unit to continue to be utilized in it's current manner. During today's inspection the unit was holding @ 38F and numerous products temped from top to bottom and front to back were holding @ 39F.Also discussed dressing preparation procedure with staff. Ranch dressing is prepared on site and all ingredients are chilled prior to preparation. Salsa is also prepared onsite and cooled in walk-in prior to being placed in this unit. Cocktail sauce; blue cheese and all other dressings are received and stored cold until transferred into drip pourers or souffle cups.

    Reach-in True fridge is NSF No 7 rated but for the storage and/or display of packaged or bottle products only. It is currently being used to house potentially hazardous foods so WCHD will review the paperwork supplied by the operator and perform a follow-up inspection in regards to this issue.

    All violations from the 4/16/14 inspection have been corrected. Reach-in freezer has been thoroughly cleaned. Shelves for reach-in fridge are on order and a copy of the order was presented to inspector. Floor sink near dishwasher has been cleaned. The paint inside the floor sink has worn away making it appear to have build up. Recommend developing a plan to repaint this floor sink so it can be easily cleanable. Lights are working in bar fridge unit.

    All violation from the 4/16/14 inspection have been corrected with the exception of the above. Dishwasher interior has been cleaned. Coca-cola units have been re-purposed to store glassware and beverages only. Large dressing containers have been moved to walk-in. Plastic handles have been ordered and a copy of the order form was presented to inspector. Water leak under reach-in on main line has been repaired. Light bulb in Coca-cola machine has been repaired.

    Observed build up of dirt and film inside top of dishwasher unit. Ensure these surfaces are thoroughly cleaned on a routine basis to prevent cross contamination.

    Observed reach-in freezer for beer glasses dirty on bottom shelves. This unit needs a thorough cleaning of all surfaces to prevent cross contamination.Observed shelves in bar reach-in fridge with corrosion and flaking off. Resurface or replace these shelves to prevent cross contamination.

    Observed three reach-in fridges in the kitchen area that are not designed to be used for food storage. They are designed for bottled water and soda storage only. The unit storing dressings was also not holding the ranch dressings and other sauces at proper temps. Ranch was temped at 56F and cocktail sauce was 46F. Bottom two shelves of product voluntarily discarded and facility will use another unit for these products. These units need to be replaced and not used for anything besides what they are designed for.Observed numerous plastic handles on reach-in units that were broken off. Replace all handles to ensure the surfaces are easily cleanable.Observed water leaking from reach-in unit on main line. It appeared to come from condenser line. Repair this leak to prevent cross contamination.
