Nothing should drain to this pan as the pan is not flat and any water in the pan ends up pooling to one side and not draining properly.

Sanitation buckets 200ppmConsumer ice (food ice) stored separate from ice used for chilling/cooling.The following violations must be corrected within 48 hours:1) Repair dishwashers to allow proper sanitation of glasses. Dishwashers were not repaired by end of inspection and the bar must switch to single-use; disposible cups and discontinue service in glassware. When the dishwashers come back into service; every piece of glassware in the bar must be rewashed before being placed back into service and a log maintained every 2 hours showing the concentration of sanitizer until reinspection.2) Replace tequila bottle or cover hole in dispensing system.3) Discard ice in the machine and wash and sanitize the walls and deflector plate before putting the unit back into service.4) Removing shelving in contact with the floor and sweep and mop under the shelving units in back store room.**Soap dispenser and drain lines corrected on site.Some of these violations are repeat violations from 2014. If the above violations are not corrected by Monday; February 2; 2015; and the Inspector is not contacted for an extension; reinspection fees will apply for subsequent reinspections.

Observed both dishwashers draining into large metal plates and thus creating standing pools of water. These units need to drain into nearby floor sinks or directly into the drain within the metal plate (while still maintaining an air gap) to eliminate any standing water.*** Note: This item has been noted on two previous inspections (7/31/14 & 8/6/14) and discussed with management staff during other inspections and still have not been addressed. If parts need to be ordered to address this issue then WCHD staff needs to be informed of steps being taken to abate this issue. No attempt to inform WCHD has been made to date. A reinspection fee of $71 will be assessed in order to confirm this item has been corrected.

Observed speed gun lines running through consumer ice. These lines may be ran through ice to keep them cold but consumer ice must be kept in a self draining container separate from ice surrounding speed gun lines. Corrected on site.

Solution changed at main dishwasher and machine primed and achieved 50 ppm Chlorine. Unit at waitress station was not able to be fixed during inspection therefore this unit is placed out of service. Unit should be serviced and may not be utilized until reinspected by WCHD staff.Facility must keep sanitizer logs for both dishwashers until further notice. Log sheet examples supplied to operator.
