Good hot food temperatures observed. Discussed the following with operator: implementing time as a public health control instead of temperature until "flip-top" refrigeration unit is capable of maintaining all PHFs at <=41F. Cole slaw is currently transferred from 2-door refrigerator to flip-top during peak service times. Additionally, "flip-top" refrigerator is to be moved away from wall to allow for proper air flow on compressor of unit. No violation noted during this evaluation. | 06/23/2015 | Routine |
