Prep refrigerator up front is not maintaining foods at 41 degrees or below. Chicken was voluntarily discarded and veggie items prepared this morning were moved to the reach-in refrigerator in the back. Have refrigerator repaired. Good handwashing observed. Onions are now kept in the dry storage room.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Chicken, milk, olives in front prep refrigerator cold holding at improper temperatures. Portioned chicken in the display refrigerator was a bit high as well. PIC states unit has been freezing so the chicken containers were double stacked.
    Correction: Chicken (prepared last night) and milk were voluntarily discarded. Olives and a couple other produce items prepared this morning were moved another refrigerator. Second container holding chicken was removed. Avoid double stacking containers of the portioned chicken, it is difficult to keep cold.

    Observation: Observed onions stored under the drainboard of the 3-compartment sink.
    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Containers of portioned chicken slices were stacked too high- chicken on top was 47 degrees.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
