  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Chemical spray bottles are not properly labeled. The PIC properly labeled all chemicals during the inspection.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
  • Toxics - Separation of Toxics (corrected on site)
    Observation: Chemicals are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed the water bottle used for bread to be stored with the chemical spray bottles, the PIC moved the water bottle to the prep area during the inspection.
    Correction: Chemicals must be separated by spacing or partitioning to prevent contamination of food, equipment, utensils, linens or single service items.

The above observations and the following were discussed with the person in charge:
-All in use utensils are being washed,rinsed and sanitized at least once every 2 hours.
-Ensure chlorine test strips are obtained if chlorine sanitizer will be used. Recommended using quaternary ammonium sanitizer in wet wiping cloth buckets until a test kit is obtained.
The quaternary ammonium 146 sanitizer in the 3 compartment sink was measured at 400 ppm.
Lots of good handwashing and glove use observed during today's inspection, great job! Thank you.

    Observation: Plastic food containers stored by the 3 compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Observed sanitizing chemical stored next to cardboard pizza boxes.
    Correction: Chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements. Chlorine sanitizer measured greater than 200ppm.
    Correction: Utilize only chlorine sanitizer that meet the requirements when applying to food contact surfaces

The above observations and the following were discussed with the person in charge:
-The ice chute on the carbonated beverage dispenser in the dining room.
-All in use utensils are being washed,rinsed and sanitized at least once every hour.
-Caulk has become worn between the wall tiles in the men's restroom.
-The under counter reach in cooler was measured at 52'F. No potentially hazardous foods were stored in this cooler during the inspection. Ensure cooler is measuring at 38'F or below if keeping potentially hazardous foods such as deli meats in this cooler.
The quaternary ammonium sanitizer in the 3 compartment sink was measured at 200 ppm.
Lots of good handwashing and glove use observed during today's inspection, great job by all staff members!

    Observation: Employees or applicants are not aware of the reporting procedures concerning information about their health and activities if they are suspected of causing, or being exposed to a confirmed disease outbreak caused by Salmonella Typhi, Shigella spp., Escherichia Coli O157:H7, Hepatitis A virus or Norovirus. Discussed employee health with the person in charge and provided handouts with more information.
    Correction: Have the license holder require employees or applicants report to the person in charge if they meet one or more of the following high-risk conditions: Is suspected of causing, or being exposed to, a confirmed disease outbreak caused by S. Typhi, Shigella, Escherichia Coli O157:H7, Hepatitis A virus or Norovirus.

    Observation: Black plastic containers stored beside the 3 compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Refuse - Maintaining Refuse Areas and Enclosures
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.
