Notes:
Datemark all temperature control for safety foods stored in refrigeration units (hot dogs, chili, cheese, etc.) to ensure that items are served or discarded within 7 days.
Wash hands often. No barehand contact with ready-to-eat foods.
Wash, rinse, sanitize and air dry all food contact surfaces (plates, tongs, utensils, etc.) at least every 4 hours of use.

    Observation: There was no temperature measuring device located in the Frigidaire Cooler.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Paint all exposed wood and block. Obtain unscented regular bleach jug. Please contact the Shenandoah Health Department prior to remodeling the facility within the next year. Make sure that the hot water heater is turned on and that the minimum temperature at the 3-bay sink is 110°F.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cold holding, hot holding or cooking temperatures of product
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a Chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions (50 - 100 ppm) and maintain them at a safe and effective level.
