- Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site) (repeated violation)
Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Observed raw chicken stored over raw shell eggs in the walk-in cooler. Discussed proper food storage with the PIC during the inspection. PIC stored the foods correctly.
Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

Observation: Dispensing utensils improperly stored between uses. Observed the scoop used to dispense cooked rice stored in water measured at 67'F.
Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.

Observation: Food stored on the floor or food stored less than 6" above the floor. Observed several boxes of foods stored on the floor in the walk-in freezer.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
- Sanitizing Solutions, Testing Devices
Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chlorine sanitizing solutions. PIC stated they would purchase a chlorine test kit to monitor the concentrations properly.
Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: The food-contact surfaces of the meat slicer blade and the surrounding areas of the slicer were observed soiled to sight and touch. PIC instructed an employee to clean and sanitize the meat slicer. PIC was given a handout regarding proper cleaning procedures of slicers during the inspection.
Correction: Clean and sanitize these surfaces for food contact.

Observation: The interior of the ice machine was observed soiled with accumulations of grime and debris. PIC instructed an employee to clean the interior of the ice machine during the inspection.
Correction: Clean the surface of the equipment at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
- Non-Food Contact Surfaces
Observation: The nonfood contact surfaces of the following equipment have accumulations of grime and debris: 1) the exterior of the two microwaves in the kitchen 2) the exterior of the sprayer nozzle at the rinse sink.
Correction: Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: No disposable towels were provided at the hand washing lavatory near the warewashing area. PIC provided disposable towels during the inspection.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Observation: Cooked noodles on prep table @64'F - noted not being adequately cooled to prevent the growth of harmful bacteria. Observed the cooked noodles relocated to the WIC during this inspection.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

Observation: Bean sprouts in water @57'F - cold holding at improper temperatures. Operator added ice to the water in order to hold the bean sprouts at 41'F or lower.
