Type

  • Refuse/Maintaining Refuse Areas and Enclosures (repeated violation)
Observation: The refuse area outside is not clean. Trash and debris was observed around the dumpster and to the right of the building.
Correction: A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items, as specified under section 6-501.114, and clean. Proper storage and disposal of garbage and refuse are necessary to minimize the development of odors, prevent such waste from becoming an attractant and harborage or breeding place for insects and rodents, and prevent the soiling of food preparation and food service areas. Improperly handled garbage creates nuisance conditions, makes housekeeping difficult, and may be a possible source of contamination of food, equipment, and utensils.
  • Maintaining Premises, Unnecessary Items and Litter (corrected on site) (repeated violation)
Observation: The premises is not free of items that are unnecessary to the operation or maintenance of the establishment. Beverage crates on the side of the building and items in the 3 compartment sink storage room.
Correction: The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment such as equipment that is nonfunctional or no longer used. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
  • Food Manager Certificate and Responsibility (corrected on site)
Observation: The establishment is not under the control of a Northern Virginia certified food manager. Corrected by instruction.
Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a Northern Virginia certified food manager

Correction: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. Outside receptacles must be constructed with tight-fitting lids or covers to prevent the scattering of the garbage or refuse by birds, the breeding of flies, or then entry of rodents.

  • Nonfood-Contact Surfaces
Observation: Soda crates used as shelving in back storage room.
Correction: Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Hard-to-clean areas could result in the attraction and harborage of insects and rodents and allow the growth of foodborne pathogenic microorganisms. Well-designed equipment enhances the ability to keep nonfood-contact surfaces clean.
  • Critical: Backflow Prevention Device, When Required (repeated violation)
Observation: No air gap at mop sink.
Correction: Alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch, or install an approved backflow prevention device.

  • Critical: Plumbing System/Repaired According to Law (Critical)
Observation: Spray hose at three compartment sink is leaking.
Correction: A plumbing system shall be repaired according to law. Improper repair or maintenance of any portion of the plumbing system may result in potential health hazards such as cross connections, backflow, or leakage. These conditions may result in the contamination of food, equipment, utensils, linens, or single-service or single-use articles.
  • Intensity/Lighting
    Observation: Inadequate lighting in walk-in.
Correction: The light intensity shall be at least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in the walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning. Properly distributed light makes the need for cleaning apparent by making accumulations of soil conspicuous.
  • Physical Facilities/Repairing
Observation: Floor in poor repair at pipes in back storage room.
Correction: Physical facilities shall be maintained in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order serve their intended purpose.
  • Maintaining Premises, Unnecessary Items and Litter
Observation: Unnecessary items in back storage room.
Correction: The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment such as equipment that is nonfunctional or no longer used. It can also provide harborage for insects and rodents.
  • Cleaning, Frequency and Restrictions
Observation: Walls and ceiling in rest-room are not clean.
Correction: Physical facilities shall be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food.
