New TurboChef Technologies HhC1618 Ventless oven installed. Need to get Building Dept. approval before remove existing hood, if permitted.
Also replacing ceiling tiles - good.
Proposed new floor tile and covebase for customer area is approved - Embledm ceramic floor - brown EM04
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Green storage shelves in walk-in refrigerator.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Outer Openings - Protected
    Observation: Self-closer missing from exterior back door.
    Correction: Need install self-closer on back exterior door.
  • Physical Facilities in Good Repair
    Observation: Covebase adjacent to mopsink is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair or replace.
