Facility not built to plan -> owner to re-submit layout of kitchen regarding coolers -> walk in cooler, 2 prep coolers, 1 worktop cooler and 3 door reach in cooler shown on plans -> only walk in cooler installed. Photo taken of layout of warewashing as-built to have evaluated by Senior Staff. Photo taken of vent system duct penetration through ceiling tiles. Trim not complete and/or cleanable at hood system. Close the gaps and/or provide trim that is smooth/durable/easily cleanable and nonabsorbent. Ice bins not air gapped- provide air gap at least twice the diameter of the drain line. Bar -> ceiling is not cleanable -> provide washable ceiling tiles. Vent hood grease cup missing -> locate/provide and install. Floor wall junctures are not coved -> install cove base in all food handling areas (kitchen, bar, front prep area). Prep sink with direct plumbing installed where hand sink is shown on plans - specify hand or prep and provide correct fixture/plumbing connection. This is not a complete list.
