    Observation: The following physical structures are not maintained in good repair: walls in kitchen areas, floor grout, and Ladies' restroom door closure.

Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food.     Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

    Observation: The nonfood contact surface of the racks/shelving racks/storage shelves are not corrosion resistant, nonabsorbent, and/or smooth (paint peeling / raw wood properly sealed).
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

    Observation: The 3-compartment sink stopper was observed in a state of disrepair and damaged - single-use container was being utilized as a stopper.

If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Correction: All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain - move the dumpster over on the pad then if items are dropped they can be easily cleaned up.

    Correction: The refuse/recyclable container storage areas and grounds adjacent to the containers are to be maintained clean and sanitary.

    Observation: Chicken Wings, Sausage, and Pasta cold holding at improper temperatures.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Chicken wings were discarded and other items along with other TCS foods were moved from the walk-in and put in a properly working reach in. Manager reported the problem to corporate and walk in is to be repaired.
