| Reviewed food safety log book. Discussed wing street chicken, which is treated as a raw product. Good procedures observed to prevent cross contamination. Observed proper food temperature monitoring. Thermometer probe was properly washed, rinsed, and sanitized. | Overall the facility is being cleaned well. Discussed hard to reach items and items that tend to build up grease and dust quickly. Good knowledge of cleaning and sanitizing. Good handwashing observed.

| No hazards noted today. Today was the monthly gathering of a social group at the facility. 40 to 50 folks showed up for dinner. This rush was handled very well by facility staff. Constant hand washing, no bare hand contact with ready-to-eat foods, sanitizer solutions at proper levels and all food temperatures were good, food safety during this rush was not compromised, GREAT JOB! All sanitizing solution concentrations (wet wiping cloth container & front three compartment sink) adequate. Facility well maintained, very good job.
