Complain was received stating that the employee never washed his hands throughout and did not wash their hands when going from cleaning and stocking to handling of ready to eat food. Eating of said handled food led to stomach distress of the complainant for 2 days. A complaint inspection was conducted. During the inspection employees were observed washing their hands when they went from using cash register to preping food and using proper barrier/utensils when handling ready to eat food. No hand washing violation was observed. Person in charge was instructed to remind their employees to wash their hands thoroughly prior to returning to food prep and proper handling of ready to eat food.

    Observation: Mozzarella cheese cold holding at improper temperatures in that said cheese were registered at 67 degrees F in pizza prep area
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: Ranch and cheese were registered at 50-52 degrees F in 2 door reach in refrigerator in front food prep area.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch in that the can opener blade in rear food prep area observed with accumulation of old food.
    Correction: Clean and sanitize these surfaces for food contact.
