Ensure all employees have current Suffolk health cards. Handwashing signage required at all handsinks. Self closing doors required on restrooms. Ensure all cold holding units are maintaining <41F. Food deliveries will be twice weekly for frozen products and three to four times weekly for fresh produce. Thawing procedure discussed ---> to take place inside of walk in refrigerator overnight. Employee health policy and reportable illnesses reviewed. Guacamole made fresh daily. Leftover beans at EOB hot held at 165Fovernight inside of warming unit. One time only. Thermometers required inside of all cold holding units. Ensure thermometers are located at the front of each unit for ease of use purposes. Splash guard required on front handsink as well as rear prep sink. Color coded utensils and cutting boards provided for meats and veggies to prevent cross contamination. Community dumpster provided ---> shared amongst multiple businesses. Hose bibb required ---> provided but not yet installed. Establishment is anticipated to open by end of next week. Once all above issues have been addressed and all City approval has been provided, contact SHD for final inspection. Permit to open to be issued at that time. ABC inspection to follow.
