Dishwashing facilities were being maintained properly. No food temperature problems were observed.
- Utensils - In-Use - Between-Use Storage (corrected on site)
Observation: The handles of the plastic disposable knives and forks (not individually wrapped), in the dining area, were facing in both orientations, in the storage container.
Correction: All of the handles of the disposable plastic utensils need to be facing in the same orientation, so that one does not accidentally touch the eating surface of other utensils when reaching for an eating utensil. This violation was immediately corrected by the establishment management. We recommend, but do not require, that individually wrapped utensils be used.
- Equipment - Good Repair and Proper Adjustment
Observation: The cold water is not working, at one of the three kitchen handwashing sinks, the one in the main kitchen room.
Correction: We require that all handwashing sinks have both hot, and cold, running water easily available at all times. This needs to be repaired as soon as possible.
- Physical Facilities in Good Repair
Observation: Paint is peeling above one of the steel prep tables, and above the right side of the two door reach-in refrigerator that is located to the right of the prep table.
Correction: The peeling paint needs to be scraped, and this surface needs to be repainted.

Handwashing, and dishwashing, facilities were being maintained properly. No food temperature problems were observed.
- Single-Service and Single-Use Articles, Use Limitation (corrected on site)
Observation: In the dining area, the disposable plastic (not individually wrapped) knives were being stored with handles in both orientations. The disposable forks, and the disposable spoons, were being stored properly-all of the handles were facing "outwards.
Correction: All of the knife handles need to be facing "outwards"-so that, if one reaches into the storage bin for a knife, then one will not accidentally touch the eating surface of other knives. We recommend, but do not require, that disposable utensils be individually wrapped. This violation was immediately corrected by the establishment management.

- Handwashing Cleanser - Availability (corrected on site)
Observation: There was no handwashing soap at one of the three handwashing sinks in the kitchen area-the handwashing sink in the room where the three-compartment (dishwashing) sink is located had no handwashing soap present.
Correction: We require that there be handwashing soap (and paper towels) at all three handwashing sinks at all times. (We do not require that there be a handsoap dispenser at each handwashing sink-a pump bottle of handsoap, or a bar of soap, are also acceptable.) This violation was immediately corrected by the establishment management.
