Discussed observations with the CFM. The kitchen was well organized clean. This inspector observed good personal hygiene practices during this inspection. The CFM has already taken corrective action prior to this inspection by submitting a work request for pest service in the employee locker room area.

A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Observed moldy cheese in the refrigerator labeled 1/30/13.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
