A professionally-run commercial kitchen with well-trained staff and knowledgeable management. Facilities are in immaculate, like-new condition with abundant space, storage, and lighting. Operation is organized, efficient, and well-stocked. There were no deficiencies noted at inspection. It is recommended that the operation use time as public health control for the serve line, instead of temperature. Lettuce in paper boats, assembled sandwhiches, etc that are difficult to temperature control during serving would be properly controlled with time. Professionally operated commercial kitchen with spacious, brightly-lit work areas that are clean, organized, and well-stocked. Management is well-versed in food safety procedures, and maintains facilities in a condition free of residues even in hard-to-clean areas. No deficiencies were noted at inspection. Very clean, well managed, and organized facility with good lighting and abundant dry storage. Food protected, properly stored. Staff are knowledgeable and responsive. No use of time as PHC---all foods hot-held or cold-held for service. Operation does use leftovers to some extent. Operator knowledgeable of proper cooling procedures. HACCP review: HACCP plan, cook record, thermometer calibration, milk temp log, cooler log, freezer log. Records are current, completed in real time, and reviewed by HACCP-trained manager. Discussed receiving log, to use invoice when checking off items received, will add temps (fresh perishables) and "f" (frozen) to invoice to denote items that were checked upon receipt. Full school facility inspection conducted. Principal ---Elizabeth Brown. Enrollment: 263 students, pre-k through 7th grade. Restroom in cafeteria has heavy hand-contact soils and needs more frequent maintenance (light switch, wall, faucet). A number of classrooms have a sink with water fountain, which had mold in the sink or insufficient flow height on the water fountain. Increase flow height to at least be higher than the water shield, to prevent contact with mouth and face. Scrub and sanitize sinks to eliminate mold. Rooms noted in need of this attention were 107, 106, 109, 120, 205, 208, 209, 210, and 211. This school has a large number of restrooms which are generally maintained in good condition. Some restrooms were noted to need attention at hand contact surfaces, where soil has accumulated. Clean and sanitize areas with sufficient frequency to prevent visible soil.
