| A clean, professionally managed restaurant. Management is knowledgeable and responsive. Facilities are well-organized, with good ventilation and active managerial control over operations. Restaurant is still growing and experiences very heavy traffic. New kitchen facilities expanded cook and dishwashing areas to include an indoor wood-fired grill, larger brick oven for pizza, full sized 3CS, and added refrigeration. Will need to add lighting to dining/food prep area (current lighting at 15fc), light shields, waste drain from 3CS to air gap, HW sink, add refrigeration unit.
