Observed excellent employee handwash and glove use practices. Cooks know cooking temperature requirements and use thermometers to verify food temps.

Observation: One of 4 chicken tenders cooked in the deep fryer was <165°F when ready to serve.
Correction: Employee had checked temps but did not check the largest tender. The employee returned the undercooked chicken to the deep fryer and cooked to >165°F. Make sure employees watch for and temperature check the larger pieces. Employees did know the required cooking temps and did use thermometers to check food temps.

Observation: Turkey in portion bags and Artichoke dip in portion cups were overstocked in the tops of the prep coolers. Temps of both foods were >41°F.
Correction: PIC placed both of these foods in another refrigerator to cool back down to <42°F. The foods had not been in the prep unit for >2 hours. Make sure employees do not place food over the tops of the food containers in the prep coolers.

Observation: Dishmachine temps were insufficient to sanitize wares. Wash 140°F and final rinse was <140°F.
Correction: PIC called service tech who had the PIC adjust the temperature setting. PIC also noticed that water was draining from machine as the cycle ran when it wasn't suppose to be. Both of these problems were corrected and machine is now sanitizing as demonstrated by temp tape turning black.
