- Observed cinnamon sugar in a bag and a container without a label. Unless its identity is unmistakable, all bulk foods removed from original packaging must be labeled with its common name to prevent misuse.
- Observed diced ham and salads with ham in the standing cooler without date labels. All potentially hazardous foods, held longer than 24 hours, must be labeled with 7-day date labeling. The manager discarded the items during inspection.
- Observed peeling paint and rusting on the Crescor and Vulcan ovens. All non-food contact surfaces must be smooth, easily cleanable, and free of cracks/abrasions. Repair, repaint, or reseal to allow for proper cleaning.
- Observed a build up of debris on the inside of the Crescor hot holding unit and its handle. Clean as routinely as necessary.
- Observed a build up of debris on the outside of the vulcan oven. Clean as routinely as necessary to prevent contamination.
- Observed several dead cockroaches in the facility and a large amount of mice feces underneath the Coke vending machines. Contact a pest management company to provide assistance on correcting the pest/rodent issue in the facility. Provide TCHD with invoices from pest control company by 3/19/16.
- Observed a build up of debris on the floor under all equipment and along edges of both the kitchen and the back storage area. All floors must be cleaned as routinely as necessary to prevent this build up. Clean routinely.
- Observed large build up of debris on the exhaust fan located above the Vulcan oven. All air ducts must be maintained to prevent the accumulation and spread of dust into the facility.
- Observed the floor-to-wall coving along wall of the 3 compartment sink and in the back storage area to be separating and accumulating debris. All walls must be maintained in good repair to allow for proper cleaning. Reseal all floor to wall covings to the wall.
- Observed build up of debris on the walls below the three compartment sink. Clean routinely.
- Facility currently does not have an FSSMC on staff. All Category I facilities must have an FSSMC on staff at all times. The manager is signed up for the June 13-14 TCHD course. Facility has 90 days to comply.
