  • Observed boxes of potatoes stored on the floor in the walk in freezer and a bag of onions stored on the floor. Food should be stored a minimum of 6 inches off the floor.
  • Observed the following non food contact surfaces to have food debris build up: the lid to the container holding hard shell tacos, between the fryer and the grill, the reach in cooler in the kitchen, both wire shelving units in the back room. Clean all areas and maintain routine cleaning.
  • Observed a spill on the floor in the walk in freezer. Clean.
  • Observed dust/debris accumulation on the ceiling vent in the back room. The wall between the can storage and the office has food debris on it and is chipped. Clean, and maintain routine cleaning.

  • Observed missing metal shielding on ice/ soda machine by drive in window. Please ensure all equipment has sufficient covering.
  • Observed black build-up on the ceiling inside the cooler located in the kitchen. Please clean to prevent the chance of physical contamination.
  • Observed grease build-up on wall and pipes behind deep fryer. Please ensure all non-food contact surfaces are clean.
  • Observed stains on shelving below hand sink. Please clean.

  • The sanitizer concentration in the buckets were high. Corrected.
  • Wash, rinse and sanitize the metal storage racks above the meat cooker, the stove and the sides of the fryers. Observed food/grease build-up. Observed soiled handlers to the doors below the hot holding island.
  • Missing cove molding near the ice machine in the drive thru, near the entry way to the lobby from the kitchen and a section coming apart near the back door. Replace and repair cove molding.
  • Observed food debris build-up on floor under equipment. Clean floors.
