  • Found clean wet metal pans stacked together still wet.

  • Observed an employee turn faucet off with wet hands before using paper towel to dry. There was also an employee that was handling dirty dishes and did not wash hands before switching tasks. Spoke to manager about doing a hand washing training with all employees and submitting verification of training to TCHd by 10/21/15.
  • Observed shelves in the Mc.Call reach in freezer with paint chipping.
  • Observed the following to have broken seals: walk-in freezer, walk-in cooler, top and bottom doors of Mc.Call freezer, reach-in cooler under salad cooler, drawer holding dressings. Top edge of ice machine is broken. The labels on the Chili pot, and Ice Tea maker are peeling off. There is tape on the shelves under the fryer.
  • Observed ice scoop near for the to-go soda dispenser being held in a dirty container.
  • Observed the reach-in cooler under salad prep station with food debris build up. Drawers and shelves on the station nearest to the walk-in cooler has food debris build up. Seals and bottom of coolers throughout facility have food debris build up, particularly the ice cream station cabinets and salad cooler. The sides of the soup hot holding there is food debris build up. The sides of the grill and shelves under grill have food debris build up.
  • Observed gaps around the to-go window. Per manager a maintenance work order will be placed.
  • Observed floors in the walk-in cooler, walk-in freezer, and under the fryer with food debris build up.
  • Observed walls throughout facility with build up, particularly around the ice cream station.
  • Observed foil wrap stored next to air fresheners in the dry storage room. Foil wrap was moved by manager during inspection.

  • Ice cream was in storage without a lid.
  • Observed damaged door seal gaskets on coolers and freezers.
  • Found no chlorine sanitizer in dish machine. The manager ran it and my test strips showed 0 ppm of Cl sanitizer, then she rinsed out the components and emptied the water, then she ran it again and her strips showed 0ppm. She put in a work order at time of inspection. Maintain at 50-100 ppm. Dishes must be sanitized in 3-comparment sink until corrected.
  • The can opener had chili on it, the hot holding area and fry area had an accumulation of grease on and around it, the flat top had grease and food splatter around it. Again The entire facility and equipment needs cleaned.
  • Every station in the facility was dirty. The ice cream station had candy everywhere, the mixers were dirty, and ice cream on the bottom of cooler. The chili station had chili that was on the top and appeared to have dripped down. The entire facility needs cleaned.
  • Found build-up of debris on floors throughout the facility. Clean the floors.
  • Food build-up on walls throughout the facility.
  • There was china destainer stored on a shelf over clean dishes. According to the label it said it's corrosive and can be damaging to eyes as well. The manager moved it away from dishes into chemical storage.

  • In the large ice machine, the ice scoop's handle was touching ice.
  • Observed an employee not washing her hands properly. She touched the faucet handle to turn it off with her hands, then got the paper towel. Another employee used the register, made a milkshake, then put on gloves later to do more food prep. After taking money she did wash her hands, but I didn't see if she washed them properly. There needs to be a training not only going over proper handwashing, proper gloves use and when to wash hands. I need documentation of this by 3-27-15.
  • Observed employees doing food prep without hats or effective hair restraint.
  • There are damaged seals on 2 reach in coolers. One has pasta noodles and the other is under the prep table and it has whipped cream in it.
  • There is buildup on handles, around the milk dispenser, inside the freezers for ice cream and ice cream dishes.
  • There is buildup on floors, especially around equipment and in the walk in freezer. There is even a name tag on the floor in the walk in freezer.
  • The coving is coming away from the wall by the walk in freezer.
  • There is food buildup on walls especially in prep areas and in milkshake station.

  • Observed waitress bussing tables and then going directly to getting beverages for tables without washing her hands. Employee was retrained on site. Conduct a hand washing training with all staff and submit documentation to TCHD, Attn:Kim by 10-24-14. Include a statement that management has observed all employees properly washing their hands after the training.
  • Kitchen and prep counters had a build up of food debris. Clean and sanitize these areas.
  • Found build-up on handles and outside of coolers and freezers and outsides of fryers and cooking equipment and on table under grill. Clean and sanitize these areas.
  • Found some stainless pans stacked wet. Allow dishes to air dry before stacking.
  • Found build-up of debris on floors. Clean the floors especially under and around equipment.
  • Food build-up on walls in food prep areas. Clean the walls.
